Place all ingredients in a small saucepan and whisk over low heat until combined and desired temperature has been reached.

They’re called oopsie rolls because they were first made by mistake, but what a fortunate mistake that was.
While not truly bread – oopsie rolls are softer and spongier and are more like a thick savory crepe in texture – they can definitely fill a void for someone who misses sandwiches, or holding a burger in their hands.

1/2 tspBaking Powder.
Separate the eggs. Whip the egg whites together with the salt until very stiff.
Mix the egg yolks and cream cheese well. Add in the psyllium husk and baking powder.
Gently fold the egg whites into the egg yolk mix.
Make the Oopsies on a baking tray or in muffin pan.
Bake for 25 minutes at 150C.
Super delicious and a great low carb alternative.
This Cauliflower Bread is perfect for your cheesy carb cravings.
Pre-heat oven to 160C.

Place the cauliflower pieces in your food processor and blitz on Speed 7 for 5 seconds until the cauliflower is finely chopped. Use Turbo a couple of times to blitz any remaining larger pieces.
Add the egg, cheese, oregano and seasoning and mix together on Speed 3 for a few seconds until well combined.
Line a baking sheet with baking paper and use olive oil to grease.
Place spoonfuls of the cauliflower mixture on the sheet and spread out into circles, around 1cm in height.
Bake for 40 minutes until slightly dried out, browning, and firm to the touch.
Remove from the oven and using a spatula carefully peel away from the baking paper. Flip over and return to the oven for 10 more minutes.
Add some avocado and some yogurt and serve immediately where possible.
A delicious chicken and mushroom pie made with tasty cheddar.
A wonderful yummy pie and very easy to make.

Slice the mushrooms, remove the stems from the spinach and grate the cheddar cheese.
Spray an ovenproof pie dish.
Season the chicken with salt, pepper and the lemon juice and rind. Steam in a food steamer until done. (You can also bake it in the oven or steam in saucepan with a bit of water if you do not have a food steamer.)
Cut the cooked chicken into small pieces.
Fry the mushrooms in a little bit of oil until just softened. Add the spinach and fry until the spinach welts.
Beat the eggs and cream cheese together.
Mix the chicken, spinach and cream cheese together and spoon into the prepared dish.
Sprinkle the cheddar cheese over.
Bake for 30-40 minutes or until the egg has set and the cheese is melted and golden.

Chop the chilli finely.
Cut the halloumi into 16 blocks
Lay a piece of bacon flat and spread a little chilli on it.
Put a block of halloumi on one end and roll it up in the bacon.
Place on a baking tray and bake for 20 minutes
It keeps well in the fridge and can be warmed up in a microwave for about 30 seconds.
A rich blue cheese and mushroom sauce is so easy to make and tastes so good.
The perfect sauce to turn any meal into a delectable unforgettable dish.
Preparation time 15 mins.
1 tsp butter
1 and 1/2 tsp fresh Garlic
1 TbspDouble Cream
1/4 tspHimalayan Salt
To season Ground Black Pepper
Chop up the chives and mince the garlic.
Melt the butter in a pan and sauté the mushrooms until slightly browning.
Turn down the heat a bit and add the blue cheese – mix – as the cheese starts to melt, add: pouring cream, double cream, chives and garlic.
Turn the heat down to LOW and simmer the sauce for approximately 3 minutes whilst stirring – until all ingredients have cooked together.
Add the salt and pepper.
TIPS: To increase the cheesy tang, add more blue cheese to the slow simmer but increase cheese gradually because it’s very easy to overdo it and spoil the sauce. IF you end up with too much tang – add a bit more pouring cream and tone the tang down with a serve of parmesan cheese (not ideal but saves the sauce). Low heat is a must at the simmer point because this sauce will spoil. Have breath mints handy for the following morning. Enjoy!
